  2. Blend the Mint
In a mixer jar, blend the mint (and coriander if using) with a few ice cubes and a small amount of water to make a smooth paste.

  3. Optional Storage of Paste
You can refrigerate this paste in an airtight container for up to 20 days, making it easy to use anytime.

  4. Melt the Mishri (Rock Sugar)
In a pan, add the broken mishri with 1 cup of water and cook on medium flame until it begins to melt.

  5. Add Mint Paste
Once the mishri is 70–80% melted, add the prepared mint paste. Continue to stir so it doesn’t stick, and cook it for 10–12 minutes until slightly thickened.

  6. Spice It Up
Add thick and fine fennel seeds, roasted cumin powder, and black salt. Mix everything thoroughly to blend the flavors.

  7. Optional Coloring
If you want a vibrant green look, dissolve a pinch of food color in water and add it. This step is purely optional.

  8. Strain the Mixture
After cooking for about 15 minutes, strain the mixture through a fine sieve. Press down to extract every drop of the syrup.

  9. Add Lemon Juice
Let the mixture cool, then mix in lemon juice extracted from 10 lemons. This enhances flavor and helps preserve the syrup.

❓ Frequently Asked Questions (FAQ)

Q1. Can I skip lemon juice?

A: Yes, lemon juice is optional. If you prefer, you can add it freshly when serving the drink instead of mixing it in the syrup.

Q2. How long can I store the syrup?

A: You can store the syrup in the refrigerator for up to 15–20 days in a clean, airtight glass or plastic bottle.

Q3. Is it necessary to use threaded mishri (rock sugar)?

A: Yes, threaded mishri is preferred as it has cooling properties and is less processed than white sugar. Avoid grinding it—just break it into pieces.

Q4. Can kids drink this?

A: Absolutely! It’s a natural and healthy drink that is safe for both kids and adults. Just avoid adding too much spice or lemon for kids.

Q5. What if I don’t have fennel seeds?

A: Fennel seeds add cooling and digestive benefits, but you can skip them if not available. The drink will still be tasty and refreshing.

Q6. Can I use dried mint instead of fresh?

A: Fresh mint is strongly recommended for best taste and color. Dried mint won’t give the same vibrant flavor or green color.
